We have two types of fillets; ones for raw consumption and ones for cooking.
Our freshly-cut mafugu fillet is sliced into 3 pieces and rapidly frozen to -196℃.
As our fillets are made from freshly-cut live fugu, you can enjoy the freshness of when they were first caught when eating raw.
Our Shime-fugu (a method of draining the blood while alive to maintain freshness) fillets are also sliced into three pieces and rapidly frozen to -45℃.
This fugu is best suited for frying, making tempura, and steaming.
